History
Filipino fried chicken is said to have originated in Quezon City (now Metro Manila) in the post-war 40s when a man by the name of Maximo Gimenez and his niece Ruby served American soldiers a batterless fried chicken recipe marinated in a fish-sauce base.
That man is the founder of Max’s Restaurant, a global chain with restaurants in the United Arab Emirates, North America and Australia. -
Ingredients
* Whole Chicken
* Dried Bay Leaves
* Chopped Cilantro or Parsley
* Water
* Cooking Oil
* Salt
* Ground Black Pepper

Cooking Procedure
Step 1: The chicken is first brined overnight in a sugar and salt solution to infuse flavor and lock in moisture.
Step 2: It is then steamed for about 30 to 40 minutes to cook the meat gently.
Step 3: Finally, the chicken is finished in a twice-deep frying process, with rest periods in between, to crisp the skin.

Cooking Reminder
Discard the brine solution after use. I wouldn’t recommend using it more than once as it will contain blood, impurities, and bacteria from the chicken that was soaked in it.
